Cathy’s Low Carb Apple Nut Cookies

Approximatly 1 Gram Net Carbs Per Cookie

I eat two cookies per meal
to satisfy dessert cravings.

 

2 cups packed Carbaloseâ flour          2 large    Eggs

2 cups   Walnuts (chopped)                2 tsp       Vanilla

1 cup     Heavy cream                            1-3 tsp    Cinnamon ( to taste)

1 cup     Splendaâ granules                 3 Tbs      Oil

3/4 cup Water                                        1 tsp       Baking Soda

½ med   Apple (chopped)                     1 pinch   Salt

1.     In a large bowl, stir Carbaloseâ flour and Splendaâ, then mix in cinnamon, baking soda, and salt.

2.     In a small bowl, beat eggs together and mix in vanilla and oil.

3.     In the large bowl, combine the dry ingredients with the egg mixture, heavy cream and water. Mix thoroughly.

4.     Add chopped walnuts and chopped apple.

5.     Drop teaspoon size portions on an oiled or non-stick cookie sheet.

6.     Bake at 325  for approximately 20 minutes

 

Makes approximately 60 cookies · Keep refrigerated
