Cathyís Low Carb Apple Nut Cookies

Approximatly 1 Gram Net Carbs Per Cookie

I eat two cookies per meal
to satisfy dessert cravings.


2 cups packed Carbalose flour††††††††† 2 large††† Eggs

2 cups Walnuts (chopped)††††††††††††††† 2 tsp ††††† Vanilla

1 cup†††† Heavy cream††††††††††††††††††††††††††† 1-3 tsp††† Cinnamon ( to taste)

1 cup†††† Splenda granules†††††††††††††††† 3 Tbs †††† Oil

3/4 cup Water††††††††††††††††††††††††††††††††††††††† 1 tsp†††††† Baking Soda

1.     In a large bowl, stir Carbalose flour and Splenda, then mix in cinnamon, baking soda, and salt.

2.     In a small bowl, beat eggs together and mix in vanilla and oil.

3.     In the large bowl, combine the dry ingredients with the egg mixture, heavy cream and water. Mix thoroughly.

4.     Add chopped walnuts and chopped apple.

5.     Drop teaspoon size portions on an oiled or non-stick cookie sheet.

6.     Bake at 325for approximately 20 minutes


Makes approximately 60 cookies Keep refrigerated
